Surrounded by 5,000 acres of private natural refuge, Spicers Canopy is an unrivalled eco-tourism experience less than 2 hours' drive from Brisbane.  Along with Spicers Canopy you will be responsible for luxury cabins that are used by the Scenic Rim Trail walks and mountain bike products.

The opportunity:

Spicers Scenic Rim Trail has a full time opportunity available for a Head Chef. This role will be responsible for creating a range of menus for the Eco-Active portfolio that reflects the Spicers standard, but meets the unique challenges of the Eco-Active locations (i.e. food which can be safely transported to remote locations and easily assembled by non-chefs).

The role is  also responsible for 

• Establishing menus for the 2 Day and 5 Day experiences and conference menus for the various Eco-Active properties which meets the Spicers standard;

• Creating food transportation processes which meet Australia food standards and be easily assembled at the arrival destination by non-chefs;

• Weekly food preparation and weekend cooking for remainder of 2019 season;

• Train all Eco-Active staff in the safe food handling and menu assembly.  The more people trained, the reduced impact of a missing staff member;

• Establishing efficient and cost-effective food ordering processes;

• Responsible for menu costings;

• Responsible for recruiting casual chefs that are available to help with food preparation and assembly (e.g. conferences, 2 Day walk, etc) where necessary;

Reporting to the Scenic Rim Trail General Manager, you will lead a passionate Kitchen team whilst growing your career in an inspiring environment.
